Kiritanpo is pounded rice moulded around a cedar skewer and toasted, then broken into a chicken hotpot. It comes from Akita's mountain villages, where hunters carried rice this way. The broth uses hinai-jidori, one of Japan's three great chicken breeds, native to this prefecture.
