Why Kobe beef, properly is famous

Kobe beef is not a style of cooking but a certification: Tajima-strain Japanese Black cattle, raised in Hyogo prefecture, graded above a fixed marbling score. Fewer than 4,000 carcasses qualify a year. Teppanyaki at a counter is the local form, and the portions are small because the fat is the point.
