Why Kushiro ramen is famous

Kushiro ramen has the thinnest, most curled noodles in Hokkaido and a light shoyu broth from bonito and kelp, which is closer to soba than to the rich styles further west. It was built for fishermen eating fast between tides, and the bowl is deliberately small.
