Why Imayo Tsukasa brewery is famous

A brewery founded in 1767 that took an unusual decision in 2006: it stopped using brewer's alcohol entirely and makes only junmai, pure rice sake. The wooden brewery is open for tours in English, which is rare, and you can see the tanks rather than a display about them.
