The story

Why Ponshukan tasting hall is famous

Niigata has about ninety sake breweries, more than any other prefecture, on the strength of soft snowmelt water and Gohyakumangoku rice. Ponshukan puts roughly a hundred of them in coin-operated dispensers: five hundred yen buys five tastings, and the salt bar beside it is there to reset your palate.
