The story

Why Tekone-zushi is famous

Tekone-zushi is bonito marinated in soy and laid over vinegared rice, invented by fishermen who had no time to cook and mixed it by hand on the boat. Tekone means hand-mixed. It is the working food of this coast and it is still eaten that way.
