Kochi grows most of Japan’s yuzu, and it shows up in juice, ponzu, kosho paste and soft serve. Buy the ponzu from Umaji village — chefs hoard it.

Kochi grows about half of Japan's yuzu, a citrus too sour to eat and too useful to ignore. It goes into ponzu, salt, pepper paste, honey drinks and everything else the prefecture can think of. The bottles travel well, which makes this the practical Kochi souvenir.

A metre of rice straw burns at around 800°C for less than a minute. The outside of the fish cooks; the inside does not. Everything about this dish is that thirty seconds.
