Why Bin-don at the Gyosai Market is famous
Bin-don is Miyako's invention: sea urchin, salmon roe and squid packed into a glass milk bottle, which you tip over your own rice. The bottle exists because uni was traditionally preserved in salt water in glass here. It was launched in the late 2010s and became the town's dish almost at once.
