Why Nodoguro, the throat-black snapper is famous

Nodoguro is blackthroat seaperch, called throat-black for the colour inside its mouth. It is one of the most expensive fish on this coast: the flesh is so fatty it is nicknamed white toro, and it is best grilled with salt and nothing else. Sakaiminato is one of the main landing ports.
