Why Miyako soba at an old house is famous

Miyako soba hides its meat under the noodles rather than laying it on top, a habit said to come from the years of crushing taxes, when a plain-looking bowl seemed humbler. The old wooden houses that serve it are the point as much as the bowl: low ceilings, tatami, and a broth recipe that has not moved.
