Why Okonomiyaki, mixed not layered is famous

Osaka okonomiyaki mixes everything into the batter before it hits the plate, which is what distinguishes it from the layered Hiroshima version, and the argument between the two cities is genuine. The name means 'grilled how you like it' and it began as a cheap wartime and post-war filler.
